Minimum 36 months on the yeasts

  Vineyard: Nerello Mascalese 100% Cultivation system: spurred cordon. Age of the vineyards: about 20 years old. Production Area: East side of Mount Etna, in Zafferana Etnea. Altitude: 550 m asl. Climate: of high hills with wide fluctuations in temperature between day and night. Type of soil: volcanic sandy, mixed with stones, rich in mineral salts. Vine density: 6.000 plants per hectare. Yield per hectare: 60 Ql. Vinification: harvested in late August. The grapes are destemmed and gently pressed. The juice ferments without skins. The wine ages in stainless steel and barrique the second fermentation in the bottle and then rests on the yeasts for several years. Disgorgement and topping up are done with the same wine. Ageing: 12 months in stainless steel, 2 months in oak barrels and at least 36 months on the yeasts in bottle. Colour: ìDelicate and brilliant antique pink. Bouquet: ìElegant white fruit, orange blossom and dried fruit. Taste: dry, with great freshness on the palate, with silky perlage, refined sapidity and persistence. Alcohol content: 12 % vol. Food matches: fatty fish or delicate meats, even with light spices. Serving temperature: 4-6 °C. Production manager  Leonardo La Corte Bottles produced: about 3.000 / year. Bottle: Champagne bottle EcoVa (8,8 x 32,6 cm) in dark glass. Bottle 75 cl. Stopper:  Agglomerated cork stopper with one natural disc. Label: in two languages. Made in wet-strength paper.

Winemaking
