Etna - Denomination of Controlled Origin Rosé

 

Vineyard: Nerello Mascalese 100%.

Cultivation system: sapling on the row.

Age of the vineyards: 10 and 40 years.

Production Area:          East side of Mount Etna, in Zafferana Etnea.

Altitude: 500 m asl.

Climate: of high hills with wide fluctuations in temperature between day and night.

Type of soil: volcanic sandy, mixed with stones, rich in mineral salts.

Vine density: 6.000 plants per hectare.

Yield per hectare: 50 Ql.

Vinification: harvest at the end of September. With the old method "Pista e Mutta", that is immediate pressing of whole grapes. The juice is fermented without  skins at 16-18 ° C.

Ageing: 6 months in stainless steel.

Colour: coral pink.

Bouquet: hints of exotic fruit, rose petals, tomatoes and fresh and spicy aromatic herbs.

Taste: dry, velvety. Balanced freshness, fine sapidity and intensity.

Alcohol content: 12,5 % vol.

Food matches: goes well with fish dishes, pasta with meat sauce and mature cheeses.

Serving temperature: 12-14 °C.

Bottle: bordeaux bottle, of type "noble" (7,3 x 31,9 cm) in white glass. Bottles 75 cl.
