VELO D’AMURI CLASSIC METHOD SPARKLING WINE ON THE YEAST BRUT NATURE ROSé Protected Geographical Indication Terre Siciliane Vineyard: Nerello Mascalese 100% Cultivation system: spurred cordon. Age of the vineyards: about 20 years old. Production Area: East side of Mount Etna, in Zafferana Etnea. Altitude: 550 m asl. Climate: of high hills with wide fluctuations in temperature between day and night. Type of soil: volcanic sandy, mixed with stones, rich in mineral salts. Vine density: 6.000 plants per hectare. Yield per hectare: 60 Ql. Vinification: harvested in late August. The grapes are destemmed, crushed, and gently pressed. The juice ferments without skins. The wine ages in stainless steel until the second fermentation in the bottle and then rests on the yeast. A quick riddling and partial disgorgement retain some of the finest yeasts. Ageing: 12 months in stainless steel and at least 24 months on the yeasts in bottle. Colour: barely noticeable pink and at times opalescent. Bouquet: marked intensity of white fruit and exotic fruit, bread crust and dried fruit. Taste: dry, natural softness, with fine perlage, fresh and with refined sapidity and persistence. Alcohol content: 12 % vol. Food matches: A wine for all meals. Its structure also allows it to pair with medium-bodied dishes such as risottos and roasts. Serving temperature: 4-6 °C. Production manager: Leonardo La Corte Bottles produced: about 3.000 / year. Bottle: Champagne bottle EcoVa (8,8 x 32,6 cm) in dark glass. Bottle 75 cl. Stopper: Agglomerated cork stopper with one natural disc. Label: in two languages. Made in wet-strength paper.

Winemaking
