Etna DOC Red Wine

Etna - Denomination of Controlled Origin Red

Vineyard: Nerello Mascalese 90%, Nerello Cappuccio 10%.

Cultivation system: sapling on the row.

Age of the vinyards: 40 years.

Production Area: East side of Mount Etna, in Zafferana Etnea.

Altitude: 550 m a.s.l.

Climate: of high hills with wide fluctuations in temperature between day and night.

Type of soil: volcanic sandy, mixed with stones, rich in mineral salts.

Vine density: 6.000 plants per hectare.

Yield per hectare: 50 Ql.

Vinification: harvest at the end of September. After destemming and pressing, the grape are fermented on the skins at 26-28 °C with pumping repeated until the end of fermentation for about 8/12 days.

Ageing: 6 months, 50% in oak barrels (in 225 lt),  50% chestnut barrels (in 500 lt).

Colour: ruby red.

Bouquet: ripe red fruits, dry rose, bark, hot spices and flint stone.

Taste: dry, with plesant tannins, balanced sapidity, full-bodied, with enveloping intensity and plesant aromatic persistence.

Alcohol content: 13,5 % vol.

Food matches: it goes well with red meat, wild game and mature cheeses.

Serving temperature: 16-18 °C.

Bottle: bordeaux bottle, of type "noble" (7,3 x 31,9 cm) in white glass. Bottles 75 cl.
