Etna - Denomination of Controlled Origin White

 

Vineyard: Carricante 65%, Cataratto 20%, Minnella Bianca 15%

Cultivation system: sapling on the row.

Age of the vineyards: 40 years.

Production Area: East side of Mount Etna, in Zafferana Etnea.

Altitude: 550 m a.s.l.

Climate: of high hills with wide fluctuations in temperature between day and night.

Type of soil: volcanic sandy, mixed with stones, rich in mineral salts.

Vine density: 6.000 plants per hectare.

Yield per hectare: 50 Ql.

Vinification: harvest at the end of September. The grape , when are still intact, are subjected to a soft pressing. The juice is fermented without skins at 18-20 °C. 

Ageing: 6 months in stainless steel.

Colour: intense and bright straw yellow.

Bouquet: hints of fruit with yellow pulp, yellow broom and other sicilian flowers and aromatic herbs which evolve into earthy notes.

Taste: dry, with elegant freshness, rich in sapidity and persistence. 

Alcohol content: 12,5 % vol.

Food matches: goes well with fish dishes, white meats and  dishes with pumpkin.

Serving temperature: 10-12 °C.

Bottle: bordeaux bottle, of type "noble" (7,3 x 31,9 cm) in white glass. Bottles 75 cl.
